PORK AFRITADA

A very popular Filipino stews that taste so good.

Ingredients

3 tbspvegetable oil
1 pcmedium potato, large diced
1 pcmedium carrot, large diced
1/2 kgpork shoulder, cut into 2-inch pieces
2 sachetsMAGGI MAGIC SARAP®
1 headgarlic, minced
1 pconion, small diced
1 pcsmall red bell pepper, large diced
1 pcsmall green bell pepper large diced
1 pcbay leaf
1 cupwater
2 cupstomato sauce
1/4 tspfreshly ground pepper
2 tbspsugar                                                                                              
  

 DIRECTIONS

1. Sauté potato and carrot in 1 tbsp oil until golden brown. Remove and set aside.
2. Season pork with 1 sachet of MAGGI MAGIC SARAP®. Sauté separately in 1 tbsp of oil, remove and set aside.
3. Sauté garlic, onion, red and green bell pepper and bay leaf in remaining 1 tbsp of oil for 5 minutes. Add tomato sauce, water and pork. Cover and gently simmer for 1 hour. Add water as needed.                     
                
4. Add potato and carrot. Season with remaining sachet of MAGGI MAGIC SARAP®, pepper and sugar. Simmer for another 10 minutes. Transfer into a serving plate and serve.
